Only the finest ingredients are used when our pastry chef creates these exquisite treats: Callebaut Belgian bittersweet and semi-sweet chocolate, fresh cream, unsalted butter, and just enough dark Jamaican rum to complement the chocolate. The interior of each truffle is filled with a smooth chocolate-rum ganache, then dipped in rich bittersweet chocolate and finally dusted generously in pure unsweetened Dutch cocoa powder.

NOTE: For shipping, we wrap truffles in gold foil to keep the cocoa powder intact.

SCONE MIXES

These all-natural Scone Mixes have been developed at the Sundial by our own pastry chef in response to guests who came here for Afternoon Tea. They are quite easy to make and are the nearest thing to home-made. Each package will make approximately 12-16 medium size scones. All you need to have on hand are: 2 eggs, 4 tablespoons of unsalted butter, and a small amount of water. Inside each package you will find a list of variations and recipes. Shelf-life is at least 12 months if kept in a cool, dry place. Left over scones can be frozen for up to 4 months. To serve (no need to thaw), wrap scones in foil; heat in 350 degree oven for 15 min.

  STEM GINGER
IN A LIGHT GINGER FLAVORED SYRUP

A gourmet treat!

One of our most popular items during the holidays and a joy to give and to receive. These versatile 1/2 inch squares of all natural Australian stem ginger can be used in a number of delicious and creative ways. Eventhough you may prefer it as it comes from the beautiful faceted round glass jar, there are several ways you may want to use it. Try slicing it into thin pieces and layer over ice cream, poached pears or poached peaches, and drizzle some of the light ginger syrup on top. Or drain it and then dip half of each chunk in melted bittersweet chocolate. An assortment of dried fruits such as prunes (our Pruneaux d'Agen, for instance), apricots, figs AND chunks of stem ginger make delightful and beautiful fruit shish-kebabs!

Crystallized GINGER
from Australia
Delicious (and healthy, too!) all natural slices of pure ginger, coated in sugar and ready to eat or use in recipes. This ginger is not hard and dry like some on the market, but tender and moist with just the right amount of sweet-tang. Try brushing off some of the sugar coating and dipping half in melted bittersweet chocolate. A welcome dessert, especially after a fish dish

  CULINARY HERB BLEND

From Belgium - Callebaut Chocolate -
the choice of many of the world's finest pastry chefs
and chocolatières, and the favorite of our own pastry chef.



We were introduced to Callebaut Belgian chocolate a long time ago while attending the International Fancy Food Show in New York City. When we opened our Tea Room here in Higganum over 25 years ago, our pastry chef served dark chocolate truffles made from Callebaut semi-sweet chocolate, and our guests loved them.

From time to time our pastry chef has created a number of treats using this excellent chocolate and has converted many of our customers to its fine quality and smooth taste. To us, fine chocolate is not just a delicacy to enjoy once in a while, but a food item which should be enjoyed regularly and served as a necessary part of a meal. You will discover how satisfying chocolate can be, and once you have tried Callebaut you'll know why we praise it so highly.

We are pleased now to offer this fine chocolate to you online. We break the pieces of chocolate from the large 11 lb bars we order, and cannot always guarantee where the breaks will occur or exactly how much each will weigh. Most of the time we try to break the chunks into 1/2 lb and 1 lb pieces, but these may vary slightly. So, we sell it to you by the ounce.Please specify roughly how many ounces you would like and will try to match as closely as possible. When ordering chocolate, it is always best to buy a bit more than you will need for any specific recipe. This way you have a little extra for nibbling, and any leftover can be stored for future use. Chocolate keeps well if stored in an air-tight container in a dry, cool place. Do not store in the refrigerator.

Pruneaux D'Agen
Marinated in fine French Armagnac
These exquisite, pitted plums from Agen, France, have been individually hand-rubbed in a very fine Armagnac at least 3 times, then allowed to rest and marinate for several months before packing in delicate round glass jars with matte gold lids and purple ribbon. They are ready to be used in a number of delicious ways for holiday entertaining or giving. Serve one or two with a slice of sherry-almond cake (see our recipe for this treat on our recipe page) or with vanilla ice cream.
